Title: DEVELOPMENT OF KODO-MILLETS BASED FUNCTIONAL EDIBLE CUPS FOR FOOD APPLICATIONS: AN EFFORT TO CUT DOWN ON PLASTIC WASTE

Abstract: Edible packaging is an innovative and emerging technology that aims to substantially reduce the food industry's dependence on non-biodegradable packaging materials. This technology presents an eco-friendly alternative that aligns with the growing demand for sustainable practices. In this study, the primary research objective was to develop, optimize, and evaluate the performance of an edible cup made from kodo millets (KD). To enhance the properties of the kodo millet-based cups, hibiscus (HB) extracts were incorporated into the cup formulation. The addition of hibiscus extracts significantly boosted the antioxidant properties of the cups. Various formulations were tested, including kodo millet cups with 0% hibiscus extract (KD/HB-0%), 3% hibiscus extract (KD/HB-3%), and 6% hibiscus extract (KD/HB-6%). The results of the study indicated that all the developed cup samples exhibited appropriate structural strength and thermal integrity, making them viable for practical use. Among the different formulations, the cups containing 6% hibiscus extract (KD/HB-6%) demonstrated the highest antioxidant activity, with a notable 49.20% increase. Sensory analysis further revealed that the KD/HB-6% cups received the highest consumer likability, indicating a favorable reception towards the taste, texture, and overall sensory attributes of the hibiscus-enhanced kodo millet cups. In summary, this study highlighted the potential of kodo millet-based edible cups as a sustainable alternative to traditional plastic cups used in the food industry. The incorporation of hibiscus extracts not only improved the antioxidant properties but also enhanced consumer appeal, suggesting a promising future for these eco-friendly packaging solutions.
